Dinner by Heston Blumenthal at Atlantis The Royal has announced the appointment of Chris Malone as its new Chef de Cuisine
With over 15 years of global culinary experience, Chris brings with him a blend of creativity, precision, and a deep-rooted passion for gastronomic innovation. Having been an integral part of Atlantis Dubai’s culinary team for the past five years, Chris has contributed significantly to the success of the resort’s acclaimed fine-dining venues, including Dinner by Heston Blumenthal. From its pre-opening stages to its celebrated launch, he has played a vital role in establishing the restaurant as one of the region’s most prestigious culinary experiences.
In his new role, Chris will lead a team of 32 and oversee all aspects of restaurant operations. Working closely with Heston Blumenthal and James ‘Jocky’ Petrie, Group Culinary Director of The Fat Duck Group, he will help shape the future of the menu, ensuring it remains true to Heston’s distinctive culinary vision while infusing it with his own dynamic approach.
Hailing from Perth, Australia, Chris Malone began his culinary career at just 15, earning early recognition through prestigious awards and honing his skills at some of Western Australia’s top restaurants. His international journey saw him work at the renowned Eleven Madison Park in New York, followed by roles at Davies and Brook in London and Ossiano in Dubai, where he led the restaurant to its first Michelin star. Chris later joined Dinner by Heston Blumenthal as Sous Chef, playing a key role in its launch, before contributing to the opening of FZN by Björn Frantzén, sister to the acclaimed Frantzén and Zén.
