Tamoka at The Ritz-Carlton, Dubai proudly announces the promotion of Chef Ze Sergio Hernandez Ruiz to the esteemed position of chef de cuisine. In this new role, Chef Sergio will continue to work closely with Executive Chef Tobias Pfister to further elevate Tamoka’s sustainable offerings, highlighting the rich culture and vibrant flavours of Latin American gastronomy.

With his passion for pushing culinary boundaries, Chef Sergio will focus on advancing the hotel’s in-house vertical farming and the farm-to-table approach, showcasing his love for growing crops and farming. Since joining the Tamoka team at its inception in 2021 as a junior sous chef, Chef Sergio has played an integral role in the restaurant’s growth.

Chef Sergio began his culinary career in Mexico, where he earned his bachelor’s degree in gastronomy. He started as a commis I at W Punta de Mita and later served as chef de partie at Sobe Dubai Rooftop Lounge before joining Tamoka. His leadership, creativity, and dedication to presenting the highest food quality have earned Tamoka various prestigious awards.

Looking ahead to September, Chef Sergio plans to reimagine the menu with new dishes influenced by Latin American and Mexican flavours, utilise the vertical farm extensively for farm-to-table creations, and enhance the grill and outdoor dining experiences.
