Gerbou has appointed Ninad Salvi as Head Chef, bringing close to 20 years of experience across Michelin-recognised kitchens and leading restaurants

He has been involved with the concept since its pre-opening phase, working on menu development and helping establish kitchen standards during launch. Originally from India, Salvi began his career in Mumbai at The Oberoi Mumbai and Shangri-La Mumbai, before moving to Jeddah and later Dubai, where he held roles at Flow Kitchen and Little Miss India, the latter listed in the Michelin Guide from 2022 to 2025.

He most recently served as Chef de Cuisine at Eunoia by Carine, overseeing day-to-day operations, team training and menu execution. In his new role, Salvi will lead Gerbou’s kitchen with a focus on refining the menu, developing the team and maintaining a consistent approach to Emirati-inspired dishes built around local ingredients and cultural references.
