Sexy Fish Dubai has appointed George Gkoregias as Executive Chef at its DIFC restaurant in Innovation One
Joining in October 2026, George brings more than 15 years of culinary experience across Japanese-inspired cuisine, Michelin-starred restaurants, and luxury dining venues.
He joins from Kioku by Endo at Raffles London at The OWO, where he led the pre-opening and launch, including menu development and kitchen recruitment and training.
Previously, he spent almost a decade with ROKA in London, progressing from Senior Chef de Partie to Head Chef and leading the kitchens at ROKA Canary Wharf and ROKA Mayfair.
He also oversaw the group’s summer residency at Hotel Arts Barcelona in 2023. George began his career in Athens, training at Le Monde before joining Michelin-starred Spondi. He later worked at Santa Marina Resort & Villas in Mykonos and Michelin-starred Pied à Terre in London before joining ROKA.
George will lead the kitchen at Sexy Fish Dubai, drawing on his experience in Japanese-inspired cuisine and luxury restaurant openings.
