Caesars Bluewaters Dubai has announced the opening of modern Japanese restaurant Paru, in partnership with award-winning Michelin-star Chef Akira Back (Sung Ook Back).

Located on the resort’s rooftop with breathtaking views across two spectacular terraces, the new eatery offers an eclectic menu of modern Japanese dishes masterfully created by Back.

Divided into three distinct areas, the journey into Paru starts with the impressive light-filled dining room. An intricate ceiling of stark white origami flowers lit with turquoise blue pays homage to the restaurant’s Japanese roots and mirrors ocean views seen from its towering glass wall. Suspended from the ceiling, a flowing steel and crystal sculpture with strings of luminous orbs nods to the restaurant’s name, meaning ‘pearl’ in Japanese.

Created by Chef Akira Back, Paru’s menu reflects the culinary landscape of modern Japan. Having trained in Japan for many years, Back is known for bringing a sense of adventure to his culinary creations, taking traditional flavours and techniques from the region and giving them his own signature twist.

Designed to deliver a sense of adventure in every bite, dishes include ‘Cool Share Plates’ such as Suzuki Ceviche (sea bass with caviar and soy yuzu ponzu) and Crispy Rice (spicy tuna on crispy rice, avocado, jalapeno, spring onion) as well as ‘Warm Share Plates’ including Hotate (scallop, baby eggplant, enoki mushroom, asparagus and truffle soy butter) and Popcorn Ebi (rock shrimp tempura, mango aioli).

Also designed-to-be-shared, a selection of marinated and flame-grilled seafood and vegetable skewers will transport guests to the streets of Tokyo – and provide the perfect partner to an expertly blended cocktail. Other menu highlights include a Black Pepper Wagyu Ribeye (mushroom, onion, black pepper) and Teriyaki Jidori Chicken (green beans, kuri kimchee, maple soy) as well as ‘Signature Rolls’ such as Paru House (tuna, salmon, scallops, shrimp tempura, yuzu miso) and Harmony (foie gras, wagyu beef, lobster tempura, truffle sauce). Best sampled at the intimate sushi counter, a selection of traditional sushi, sashimi and temaki – created by the sushi master – is also on offer.
