Le Guilan will open in Downtown Dubai this September, bringing a contemporary interpretation of northern Iranian cuisine to the city.
The independent all-day restaurant will overlook South Ridge Park and draw on the culinary traditions of Gilan, a province on Iran’s Caspian coast. The concept takes inspiration from early 20th-century Persian culture, combining traditional recipes and ingredients with European culinary techniques and modern presentation.
The menu will focus on Persian flavours while applying classical French technique to preparation and execution. Led by Chef Houman, the kitchen will combine Persian recipes and ingredients with classical French technique. Dishes will retain their traditional flavour profiles while focusing on precision, texture and presentation.
Signature dishes will include Bread & Black Butter, served with freshly baked bread and fermented black garlic butter; Short Ribs with Chocolate Jus; and Saffron French Toast, made with brioche soaked in saffron custard and caramelised to order. House-made pickles, preserves and relishes will also feature across the menu, drawing on the Persian tradition of preserving seasonal produce.
The interiors take cues from Persian manor houses, interpreted through a contemporary setting with deep textures, a soft colour palette and bespoke fixtures. The restaurant will include a botanical terrace overlooking South Ridge Park, with views towards the Burj Khalifa.
The space will accommodate different dayparts, from daytime dining and afternoon tea to dinner and evening service. Music will run throughout the day, with occasional live sets in the evening, while the service approach draws on Persian hospitality.
