Kinara by Vikas Khanna at JA Lake View Hotel will host Michelin-acclaimed Chef Vikas Khanna on 21 November for the third instalment of its Forgotten Flavours dining series
Titled Coast to Coast, the one-night-only dinner will accommodate 60 guests and explore India’s eastern and western coastal cuisines through a curated menu and grape pairings.
Chef Vikas Khanna and Chef Ashish Kumar will present a menu inspired by India’s coastal ingredients and culinary traditions. The dinner will take place in a single seating at 7pm, priced at AED900 per person, inclusive of the menu, wine pairings and a welcome cocktail.
The menu opens with Bharuchi Spiced Paneer and Charred Bharli Vangi, followed by Balchão, available with mushroom or prawn. Kerala Vegetable Stew with mini uthappam and ghee precedes a choice of Cauliflower Steak Chettinad or Lobster Chettinad, served with neer dosa and ragi roti. Dessert is Nolen Gur Baked Rasogulla with caramelised cottage cheese and mishti doi ice cream.
Chef Vikas Khanna shares: “India’s coastal cuisines tell extraordinary stories of people, places and traditions shaped by the sea. What fascinates me is how ingredients and techniques have travelled between communities, creating flavours that are both deeply rooted and beautifully diverse. With Coast to Coast, we wanted to honour these traditions while presenting them through a contemporary dining experience. Our collaboration with Kala Huis adds another dimension to that storytelling, exploring how fragrance, much like food, can evoke a sense of place, awaken memories and connect us to our heritage. I look forward to sharing this very special evening with our guests in Dubai.”
